Today I’m excited to introduce you to Gyoza-ya Ninoni Shimizu Factory, located in Muroenmachi, Kita-ku, Kumamoto City — a hidden gem for anyone who loves authentic Japanese gyoza (pan-fried dumplings).

This is a direct factory outlet specializing in gyoza, so you’ll find a fantastic variety of takeaway options to bring back to your hotel or apartment.

There’s plenty of parking right in front of the shop, so visiting by rental car is no problem at all — perfect for travelers exploring Kumamoto Prefecture by road.

You’ll also spot a vending machine outside the shop — a quintessentially Japanese sight!

There are also chairs and tables set up outside, so you can grab a drink from the vending machine and enjoy your takeaway gyoza right there. It’s a nice casual setup for a quick bite.

Inside, you’ll find a great selection of frozen gyoza, including:
Boiled Gyoza (Sui-gyoza) — 500 yen
Ginger Gyoza — 600 yen
Garlic Chive (Nira) Gyoza — 600 yen
Pan-fried Gyoza (Yaki-gyoza) — 500 yen
The frozen options are perfect because they keep well — great if you have access to a freezer at your accommodation!

Bang Bang Chicken (Bang Bang Ji) — 430 yen is also available — an authentic Chinese-style cold chicken dish that looked absolutely amazing.

Crispy outside, sweet and chewy inside — heaven.

Mapo Tofu is normally 480 yen, but was on sale for 300 yen.

This time, I picked up the
Boiled Gyoza (Sui-gyoza) — 15 pieces for 500 yen

Did I mention how cute the packaging is? It even features an adorable pig illustration — a great little souvenir vibe!

Best of all, cooking instructions for both pan-frying and boiling are printed on the package, making it super easy to prepare even if you’re not a confident cook!

Here’s what they look like inside the bag. They’re lightly dusted with flour to keep them from sticking together — a thoughtful touch that really makes a difference!

I wanted to keep all that flavorful umami broth, so I served the gyoza together with the boiling liquid — and let me tell you, that was the best decision ever.

The pork fat melts into the broth, making it incredibly rich and savory!

And the boiled gyoza themselves? Absolutely outstanding.
(One or two lost their shape because of my clumsy ladle work — sorry about that!)

The pork filling is unbelievably juicy and meaty, with deep, savory flavors bursting out with every bite.

Pure umami explodes in your mouth!juicy goodness!

The wrappers have that perfect chewy, mochi-like texture — substantial yet smooth enough that you could keep eating endlessly.

Even my kids ate them as if they were drinking them — they vanished in seconds!
