that my greeting accidentally came out in Italian!

a restaurant in Chuo-ku, Kumamoto City, Kumamoto Prefecture,
“Ristorante Miyamoto”.

A Kumamoto-loving chef weaves magic with Kumamoto’s local ingredients β€”
truly a long-established Kumamoto Italian institution!

The restaurant is famous for its wood-fire grilled “Akaushi” (Kumamoto’s brand red beef).

Dinner here can feel a bit upscale and intimidating β€”
but at lunch, you can enjoy delicious pasta at very reasonable prices!

There’s a parking lot right next to the restaurant!

Such a stylish atmosphere!!
An impressive lineup of wines is on display.

It really gives off a special-occasion vibe!

The interior makes you feel like you’ve stepped into Italy, with red tablecloths adding a vivid pop of color.

Plus, the walls are lined with autographs from famous chefs across Japan!
A clear sign that this restaurant is loved by fellow chefs too!

There’s also a 3,800 yen full course with meat and fish dishes.

Today, I went with the pasta lunch.

First up β€” BOOM!
A salad piled high with vegetables!

Around 20 different kinds of ALL-Kumamoto vegetables
are prepared using a variety of cooking methods.

Microgreens and herbs are scattered throughout,
creating a beautiful balance of sweetness, acidity, and aroma.
Fragrance is such a key factor in cooking, isn’t it?

I really wish I could share the scent with you through the screen!

Next up:
Naples-style genovese paccheri with beef.

When you hear “genovese,” you probably picture the green basil sauce β€”
but Neapolitan-style genovese is actually a slow-simmered stew of beef and tomato.

It coats the wide, tube-shaped paccheri pasta perfectly.

The plates, made by local Kumamoto pottery artisans, are a stylish touch too!

And then β€” even more pasta!
Double pasta, what a treat!

Creamy carbonara!

The #1 favorite pasta among women has got to be carbonara, right?

Mushrooms are added, which surprisingly makes it feel light and refreshing!
