This is Binako, your Sarukuma writer, reporting with a slightly bruised left knee β€” courtesy of my son who decided to leap onto the back of my leg the moment he woke up this morning. Why the jump, my dear son?

Today I’m excited to introduce you to a brand-new sweets shop that just had its pre-opening today:
“Okashiya tumugu”, tucked away in Oe, Chuo Ward, Kumamoto City.

“Tumugu” (紑ぐ) is a beautiful Japanese word meaning “to spin” or “to weave together” β€” a poetic name that perfectly suits a craft-driven sweets shop. Just hearing it makes your heart melt!

With excitement bubbling, off I went!

There’s one parking space right in front of the shop. If it’s already occupied, no worries β€” there are several coin parking lots nearby that you can use instead.

Step inside, and you’re greeted by a sparkling glass display case lined with handcrafted sweets, almost as if each one is calling out, “Welcome!”

“Let’s all do our best from today on!”
I could practically hear the cakes cheering each other on.

Wait β€” kabosu cheesecake?!

(For those new to Japan: kabosu is a fragrant green citrus fruit, somewhere between a lime and a yuzu, beloved across Kyushu.)

The whole kabosu β€” peel and all β€” is folded right into the cake.
A luxurious, zero-waste, absolutely gorgeous creation…

I was completely smitten just looking at it.

Time to dig in.

So delicious I almost passed out.

The cheesecake is rich yet incredibly delicate β€” it literally melts the moment it touches your tongue.

The deep creaminess of the cheese is balanced beautifully by the bright sourness of kabosu and a faint, grown-up bitterness from the peel.
A truly sophisticated cheesecake β€” and outrageously tasty.
