Introducing Bistro MONA

Hello travelers! I’m Aikero, a writer for Sarukuma.

Today I’m excited to introduce a delightful spot in Kusabamachi, Chuo Ward, Kumamoto City:
Bistro MONA.Newly opened on November 25, 2024!
The chef, who trained at a renowned hotel, carefully selects each ingredient and serves elaborate French-based cuisine paired with natural wines — all in a relaxed, welcoming setting.

The shop’s logo and name “MONA” come from the owner’s beloved pet dog!
Look for the cheerful sign featuring a dog wearing a chef’s hat (^^)/
A French bistro might sound a bit formal, but don’t be intimidated!

“We’d love for families with children to feel comfortable visiting. If you’d like to bring your own kids’ food or request a child-friendly meal, just contact us in advance and we’ll happily accommodate,” says the owner-chef, who is a parent himself.

Recommended Menu Highlights at Bistro MONA

Let’s start with the appetizers.
Getting to sample a little bit of everything is always such a treat (*’ω’*)

• Salad of Kumamoto-grown new onions with house-made dressing
• Salt-cured mini tomatoes from Yatsushiro
• Carpaccio of red sea bream from Amakusa
• Carrot rapée
• House-made tomato quiche with five vegetables
• Pâté de campagne made with Kumamoto’s “Asobi-ton” pork
• White liver pâté
• House-made ricotta cheese with strawberries
Salad of Kumamoto-grown New Onions with House-made Dressing
Even the dressing is homemade!
The light, tangy flavor of the house dressing was absolutely delicious!

Salt-cured Mini Tomatoes from Yatsushiro
These tomatoes feature a perfect balance of mild acidity and concentrated sweetness.
Beyond the wonderful taste, what surprised me was the texture!
The skin is unusually thick and meaty — quite unlike any tomato I’d had before.Carpaccio of Red Sea Bream from Amakusa
I’m a huge carpaccio fan!
Light and refreshing — exactly what an appetizer should be.
The Amakusa red sea bream had a delightfully firm, meaty texture!House-made Quiche with Five Vegetables and Tomato
This homemade quiche packs the tangy brightness of tomato together with the savory umami of fresh vegetables.
The pastry is crisp and flaky right down to the bottom, with a beautifully toasted, fragrant finish!

Best of all, this quiche is made without eggs — a true chef’s recommendation (^^)/
White Liver Pâté
White liver is a rare delicacy known for being free of any gamey aftertaste — and the flavor is wonderfully rich.
I’m usually not a big fan of liver, but this one completely changed my mind!
Generously spread on a perfectly toasted baguette, the smooth pâté was simply heavenly.
What a shame I couldn’t enjoy it with wine this time! (tears)
Pâté de Campagne Made with Kumamoto’s Asobi-ton Pork
Have you ever heard of “Asobi-ton”?
These pigs are raised in spacious, natural-style pens where they dig in the soil and run around freely — hence the name, which means “playful pig.”
Raised on the underground spring water of Mount Aso, the meat is wonderfully clean-tasting with a distinctive sweet fattiness.

Pâté de campagne is a traditional French dish often called “country-style pâté.”
The texture is moist and tender, with the savory richness of the pork unfolding with every bite!House-made Ricotta Cheese with Strawberries
The creamy, milky flavor of homemade ricotta paired beautifully with the bright sweetness of fresh strawberries!
The tiny popping seeds added a delightful textural accent!

Even the appetizer course alone showcases the chef’s commitment to quality ingredients and house-made elements — every dish is wonderfully thoughtful!
My excitement for the next courses was already through the roof!Mushroom and Onion Soup with Truffle Aroma
The rich, earthy aroma of mushrooms wafted up the moment the soup arrived at our table.
A blend of multiple mushroom varieties combined with the natural sweetness of onions creates a deep, comforting flavor.
You can taste the time and care that went into making this — I savored every single spoonful (●^o^●)Pork Shoulder Loin with Japanese-style Mustard Sauce
For the main dish, you can choose from three options.
The accompanying vegetables come in such variety — what a beautiful, colorful presentation!
I dipped each bite generously in the sauce! The fat is gently sweet but never heavy — light and refreshing throughout!
The more you chew, the more juicy umami pours from the pork, perfectly complemented by the light Japanese-style sauce.
A truly satisfying, hearty dish!Wagyu Beef Tendon Stew
For our second main, we picked the bistro’s signature popular dish.
Just hearing the name, you know it’s going to be incredible! (●^o^●)

It’s served covered with a lid.
The excitement of lifting the lid is half the fun!
Generous chunks of beef tendon!
They practically melt in your mouth — incredibly tender!
I knew it would be amazing, but it completely exceeded my expectations!
Enjoyed alongside fresh baguette.
The deeply flavorful, slightly tangy beef stew pairs perfectly with the bread!

We went as a pair this time so we could share, but if you’re dining solo, choosing between the mains will be a tough call! (;^ω^)
Both dishes were absolutely delicious!

For sheer heartiness, the pork shoulder loin wins.
If you’re dining with kids, the beef stew is the way to go!For your after-dinner drink, you can choose between herbal tea or coffee!
It’s a refined, light course meal, but I left feeling completely satisfied (●^o^●)

One important note: the chef prepares everything single-handedly, so we recommend allowing plenty of time for your meal!

Meet owner-chef Mr. Murakami.

“I have a 2-year-old of my own. The atmosphere might feel a bit formal at first glance, but I really hope families with children will feel comfortable visiting. I use seasonal, local ingredients, so please come enjoy how the menu evolves throughout the year.”

Why not treat yourself to elaborate, lovingly prepared cuisine by a chef trained at a top-tier hotel — all in a relaxed, casual setting?
Every dish reflects the chef’s dedication to quality ingredients and craftsmanship, leaving you completely satisfied (●^o^●)
