Today I’m taking you to a local gem in the highlands of Aso:
Takamori Dengaku Mura, located in Kamishikimi, Takamori-machi, Aso District, Kumamoto Prefecture.

“Takamori Dengaku Mura” is a must-visit for anyone curious about authentic Japanese countryside cuisine.

I have been dreaming about dengaku for SO long!
And I finally got to try it!
I couldn’t be happier!

(In case you’re wondering โ€” dengaku is a traditional Japanese dish where ingredients are skewered, grilled over charcoal, and brushed with a sweet-savory miso glaze. It’s been enjoyed in Japan for centuries.)

The parking lot in front of the restaurant is huge,
so you’ll never have to worry about finding a space โ€” perfect for travelers driving around Aso!

As I walked toward the entrance,
a slightly stretched-out Kumamon (Kumamoto’s beloved black bear mascot) was there to greet me with a smile!

Right by the entrance you’ll find dengaku miso, soy sauce for tamago-gohan (egg over rice), and other local condiments for sale โ€” wonderful souvenirs to take home!

And on the opposite side, there’s a selection of teas.

Inside, there are both Western-style table seats and traditional tatami (zashiki) seating โ€” try the tatami room for an authentic Japanese dining experience!

Most guests were enjoying their meals on the tatami floor.

And then โ€” the charcoal hearth was lit at our table.

Oh, the anticipation!
I was already buzzing with excitement!

These hearty set meals are the main highlights of the menu!

On the back of the menu you’ll find single-item dishes and a drink menu.

Pairing dengaku with a leisurely glass of sake or local beer sounds wonderful~!
(Although I don’t drink myselfโ€ฆ!)

This time I went with the Aso Dengaku Set Meal โ€” 1,980 yen!

The yamame (mountain trout) is fished out of the live tank only after you order, so it’s incredibly fresh!

The first small dish to arrive was absolutely delicious.
Warm, fluffy, and seasoned with a gentle, comforting flavor โ€” exactly the kind of homestyle taste I love.

Once the skewers were nicely grilled, a member of the friendly staff came by to brush them with miso for me!

Oh, I couldn’t wait any longer!
I was DYING to dig in!
I’d been waiting forever for this moment!

Then came the takana-meshi (rice with pickled mustard greens), dago-jiru (a hearty dumpling soup), and house pickles.
It looked positively divine!

The dago-jiru is wonderfully chewy and flavorful.
It’s loaded with vegetables, too.
It warms you up from the inside out โ€” perfect comfort food on a chilly Aso day.

Japanese country cooking at its finest.
Unbelievably delicious.

And finally โ€” the moment we’d all been waiting for, the dengaku skewers!
I was so excited to taste them!

Imo-tanpo (mashed sweet potato on a skewer)

This one is incredible.
The outside is crispy from the grill, while the inside is soft and pillowy.

And that dengaku miso? Absolutely phenomenal.

I dove in so fast that this photo was taken mid-bite โ€” but the quail eggs were piping hot and beautifully tender from the charcoal heat.

The konnyaku (a chewy Japanese yam jelly) had a wonderful springy bite, too!

And once again โ€” that dengaku miso is heavenly.

How is it that grilled green peppers and daikon radish taste this good?
They pair so beautifully with the dengaku miso.
Mmm โ€” heavenly!

Tsurunoko-imo (a local Aso variety of taro) โ€” grilled to a chewy, silky perfection!
It was my first time trying this taro, and wow, it’s seriously delicious!
The combination of dengaku miso and taro had my taste buds doing a happy dance!

Look at all that gorgeous miso glaze โ€” I was grinning before I even took a bite!

I saved the tofu skewer for last.
I’m the type who saves the best for the very end!

Oh my goodness, this is happiness!
The grilled tofu loses just enough moisture to give it a satisfying, meaty bite.

That tofu I patiently nurtured to the very end? A total winner.

And now โ€” the showstopper! Time for the yamame trout!

I picked off the salt crust and took a big bite!

The salt has soaked deep into the trout, intensifying its rich, savory flavor!
The flesh is tender, juicy, and not the least bit dry.
It was so good I ate the whole fish โ€” head to tail!

I’m guessing this is where you put your finished skewers.

The staff at Takamori Dengaku Mura were incredibly kind and attentive!
