Today we’re heading to Ippudo Shimotori, located right in the heart of Kumamoto City’s bustling Shimotori shopping arcade (Chuo Ward).

Ippudo is one of Japan’s most famous ramen brands, known worldwide for its rich tonkotsu broth — but today we’re trying something different. The shop has just launched its summer-only Cold Tantanmen, and we couldn’t resist giving it a taste.

The broth has a creamy sesame and soy milk base — light, refreshing, and surprisingly different from Ippudo’s usual hearty pork-bone style. But trust us, it’s absolutely delicious.

A subtle hit of sansho (Japanese pepper) gradually builds up as you eat, leaving a pleasant tingling sensation on the tongue — that signature numbing-spicy kick beloved in Sichuan-inspired Japanese cuisine.

Halfway through, squeeze in the lemon wedge for a bright, citrusy twist that transforms the flavor entirely. It’s the perfect refreshing pick-me-up on a hot, humid Japanese summer day.

The noodles are chilled in ice water, giving them an incredibly firm, springy bite — a textural delight from the very first slurp.

One thing to note: the Cold Tantanmen isn’t available with the standard Lunch Set A or B, so heartier appetites may want to upgrade to the large-size portion. Cilantro lovers, rejoice — you can also add fresh coriander on top. Highly recommended!

There is no dedicated parking lot. Please use one of the nearby coin parking lots in the Shimotori area. The shop is easily accessible on foot from the Kumamoto Castle and downtown shopping district.
