Today I’m excited to introduce a hidden gem located in Takahira, Kita Ward, Kumamoto City
a premium shokupan (Japanese milk bread) specialty shop
“Kakumei to wa Kono Koto” (Revolution Is This).
Opened in November 2019 in Takahira, Kita Ward, Kumamoto City,
this bakery is famous for its boldly memorable name.
It’s also widely known as one of the shops produced by Takuya Kishimoto, the celebrated bread producer credited with sparking Japan’s premium shokupan boom.
Mr. Kishimoto has produced premium shokupan shops all across Japan,
and every single one becomes a smash hit — truly an impressive figure!
Kakumei to wa Kono Koto is no exception —
since opening day, it has drawn long queues
and frequently sells out early.
It’s already a household name among Kumamoto locals,
but allow me to introduce it once again for our international readers!

The shop sits on the ground floor of an apartment building.
Across the street, you’ll find a spacious parking lot.
A clearly marked overflow parking sign makes it easy to find.

The impact of the shop’s name is unforgettable!
It apparently expresses the founders’ wish to “start a revolution in shokupan.”
Since this is a takeout-only shop,
the interior is just a counter for ordering and pickup.
They accept major credit cards and cashless app payments — convenient for international visitors!

Recommended Menu

The lineup includes two regular items,
plus limited-edition loaves available at specific baking times in limited quantities.

The two regular offerings are:
• A chewy, plain-dough loaf called
“Kakumei wa Totsuzen ni” (Revolution Comes Suddenly) — ¥800

• A loaf generously studded with plump Sun Muscat raisins,
“Revolution na Asa” (A Revolutionary Morning) — ¥980

The limited-edition items available during my visit were as follows:

• A new wagashi-inspired (Japanese sweet) shokupan:
Available at 14:00 in limited quantities,
Dainagon Kakumei “Miyabi” (Sweet Red Bean Revolution “Elegance”) — ¥980

• A perennial favorite featuring slow-roasted walnuts in an exquisite harmony of aroma and texture:
Weekdays only, available at 14:00 in limited quantities —
The Signature Walnut Loaf — ¥980

What I tried was the plain version,
“Kakumei wa Totsuzen ni” — 2-kin (about 1.2kg) for ¥800.
When you pick it up, it’s reassuringly hefty.

Tearing it apart by hand for that indulgent moment…
There’s a lovely springiness, with a moist, fluffy, pillow-soft texture inside.
The shop uses Japanese-made fresh cream,
which gives the bread a beautiful natural sweetness
and a luxurious, almost danish-like richness.

Their water comes from the famous Shirakawa Suigen spring in Aso —
a renowned spiritual power spot known for its mineral-rich waters.
This special water is said to be essential to creating shokupan unlike any other.

Even the crust is incredibly soft and melts in your mouth,
which makes it dangerously easy to keep eating slice after slice~ ♪

There’s barely any “crust” to speak of,
so even those who normally avoid bread crusts
can enjoy this loaf without a second thought!
It’s also highly recommended for anyone with a sweet tooth ☆

Pickup times are scheduled around when each batch comes out of the oven,
so be sure to check carefully before you visit.

I visited on a weekday,
but just 30 minutes after opening, some loaves were already marked SOLD OUT!

Luckily I had reserved in advance, so I got mine without trouble —
but without a reservation, I would have likely had to wait until the afternoon.

I highly recommend reserving in advance to make sure you don’t miss out!

According to the shop’s pamphlet,
the bread is at its best eaten plain (untoasted) on the day of purchase or the next day.

By the way, here’s what it looks like toasted! ↓
A light golden toast — looking absolutely perfect ♬

I almost spread butter or jam on it,
but it was so delicious plain that I devoured the whole thing as-is! (laugh)

Following the pamphlet’s instructions,
I also tried slicing it thick → wrapping in plastic → freezing,
then toasting straight from frozen —
and it kept all that luxurious flavor beautifully intact!
