Today I’m introducing a wonderful little spot in Minamiaso Village, Aso District, called
[Caramel Pudding].
This charming little pudding shop sits along the route from Minamiaso to Takamori.
I’ve stopped by several times over the past 15 years or so, and today’s visit was my first in a long while.

“Pudding that lingers in the memory of those who taste it.”
That’s the heartfelt philosophy behind the pudding at Minamiaso’s “Caramel Pudding.”
Made with carefully selected ingredients and the dedication of local producers, each bite delivers a gentle, comforting flavor that stays with you long after.
Beyond just the deliciousness, the owner shared the values close to his heart, so I hope you’ll read all the way through.
The shop is along Route 325, just past the natural-wood-styled Lawson Minamiaso Hakusui store.
A large sign at the entrance makes it easy to spot, and many locals already know it well.
Here’s the parking area.
There’s a ramp, so strollers and wheelchairs can enter easily.
Inside, you’ll also find a small selection of lifestyle goods for sale.

The Minamiaso Signature Pudding has even been featured on Kyushu Shinkansen’s onboard sales!
And on the limited express “Aso Boy,” you can find both the Adult Pudding and a special train-exclusive Children’s Pudding.
Within Minamiaso Village, the puddings are also sold at Shirakawa Suigen Bussankan “Shizen-an” and the Aso-bo no Sato Kugino roadside station — definitely worth checking out!

The puddings are made from carefully selected ingredients including Aso Oguni Jersey milk, eggs from Kumamoto and Fukuoka, and free-range fertile eggs from Takamori Town for some products.
Jersey milk may be familiar to Kumamoto locals, but did you know it’s actually quite rare?

There are tables inside the shop, but if you’re going to be there…
I highly recommend the terrace seating, where you can enjoy the magnificent Minamiaso scenery!
On a sunny day, it’s an absolute delight (^^)

For gifts and souvenirs, they’ll wrap your box with a decorative ribbon.
The adorable puddings inside are sure to delight whoever receives them ♪

A free 3-hour ice pack is included with takeout.
Very thoughtful for travelers coming from afar!
If you’ll be traveling longer than 3 hours, you can either bring your own ice pack and cooler bag, or purchase a cooler bag with a 300g ice pack on site.

Caramel Pudding’s Recommended Menu

After much deliberation, I picked four flavors!
The little milk-bottle shape and packaging are so cute — exciting before I even took a bite!

Even though I had cheese pudding for dine-in, I couldn’t resist taking another home — it was that good. lol
The cheese pudding I had been eyeing? My son — who has incredible taste-bud radar — devoured it. lol

The flavor isn’t quite pudding — it’s more like a rare cheesecake!
You get the rich tang of cheese balanced with the milky depth of Jersey milk.
But eaten with the caramel sauce, it transforms into a true pudding flavor — it’s wonderfully mysterious.
Cheese lovers will absolutely adore this one.

My daughter went for the silky-smooth Creamy Pudding.
The egg flavor and milk richness blend beautifully, and the caramel adds a second layer of deliciousness ♡
“It’s so good — I want this again!” she declared, instantly hooked (*’ω’*)
The Famous White Pudding is a slightly lighter milk pudding compared to the others.
That lighter touch is exactly what lets the Jersey milk’s pure flavor shine through.

The Adult Pudding went to my husband.
Made with rum, its rich aroma and flavor will absolutely delight anyone who enjoys a touch of liquor!

My personal favorite? It’s a tough call, but cheese pudding wins — for now!
Though I have a feeling chocolate would steal the crown if I tried it. lol
The best strategy is to try a variety!

The Heart Behind Caramel Pudding

Meet Mr. Yamaguchi, the owner of Caramel Pudding.
He’s actually turned down magazine interviews in the past, but graciously agreed to chat with us, saying, “Since you came all this way…”
He originally ran a café on Shower Street, and after his pudding became a hit, he opened this dedicated pudding shop.

He shared so many wonderful stories with us! (^^)
Now, about that Jersey milk you’ve been wondering about…

It might not feel rare to people in Kumamoto, but what percentage of all dairy cattle do you think are Jersey cows?

Hmm… around 30%?
Actually, it’s only about 0.8%.
Jersey cows are about 20% smaller than Holsteins, so they produce less milk. As a result, the number of farmers raising them keeps declining.

Wow, that’s so much rarer than I thought! I had no idea…
It’s a bit pricier than regular milk so I haven’t bought it before, but now I understand the story behind it.

Caramel Pudding uses milk that’s gently pasteurized at 65°C for 30 minutes.
Jersey milk is naturally rich, with high fat content and bold flavor — and this gentle pasteurization keeps it closer to fresh raw milk in taste (which is also why it costs more).

We sell pudding made with Jersey milk, but all I can do is make pudding.
I can only do that because of the producers who supply the ingredients.
This goes for the milk, but also the eggs.
This pudding exists thanks to those producers, so I want customers to know their stories too.

This is something I really wanted to share.
Of course, we’re only able to do these interviews thanks to the cooperation of shop owners, so we want to faithfully convey their feelings as well.

All we have here is pudding, so I want each one to have its own distinct flavor — but I never want to chase trends just for the sake of being talked about.

I want to make pudding that someone wants to eat again — pudding that lingers in their memory.
Even for someone who can’t visit the shop again, if they remember “that pudding was really good” in some corner of their mind, that would make me happy.

I always wonder if this recipe is the right one. Sometimes ingredients get replaced or discontinued, so things shift gradually over time.

Actually, I stopped by your shop a few times about 15 years ago. My family and I would drive past and say, “There’s a cute little shop, let’s go!”
I always remembered it — the charming shop, and the smooth pudding in those little bottles.
That’s why I wanted to come back and asked if I could do an interview.
Is that right? That makes me really happy. Thank you.

I’d love for it to become something like “You have to try the pudding from Minamiaso” — a true Aso specialty.
