Introducing Bake Shop Hatch
Hello travelers, I’m Gachako, a writer for Sarukuma.
I dropped in on a whim with zero research beforehand, but I was completely blown away. Run by a parent and child duo, this little bakery offers an astonishing variety of breads, all made with carefully chosen, wholesome ingredients. I tip my hat to them.
Today I’m introducing a gem located in Koga, Taimei-machi, Tamana City:
Bake Shop Hatch.

Look for the colorful banner flag and signboard out front.
Bake Shop Hatch has parking right in front of the building as well as on the adjacent lot.

Even though I arrived on a weekday before lunchtime, the lot was already packed!
The entrance sits beyond a gorgeous garden in full bloom with roses.

So many varieties to choose from!
With this incredible lineup, you’ll truly enjoy the fun of choosing.
Bake Shop Hatch is dedicated to quality ingredients.
Natural yeast, domestic wheat from Hokkaido or Tamana, beet sugar for sweetness, and mineral-rich water.
And despite all this attention to ingredients, the prices are incredibly reasonable.

I was thrilled to spot a round bun made with enzyme brown rice (Kouso Genmai, 130 yen) β a Japanese health food I personally love (laughs). I asked the shop “Who cooks the enzyme brown rice?” and we ended up swapping enzyme brown rice tips and stories.

You’ll also find savory bread options like the ripe tomato pizza (260 yen) and the spicy chorizo and curry focaccia (300 yen),
plus sandwiches, pudding, cheesecake, and even rice flour chiffon cake!
Bake Shop Hatch Recommended Menu

The first thing that caught my eye was the Honey Nut Toast.
Generously topped with crispy caramelized almonds and premium honey.
The wheat flavor deepens with every bite. Absolutely delicious.

Of course I had to try the enzyme brown rice round bun too β the one that got me most excited.
It looks plump and chewy at first glance, but…

One bite and it’s so fluffy. Incredibly light.
The enzyme brown rice adds a delightful pop of texture β kids will love it too!

I also tried that day’s brand new release: the Tantan Keema Curry and Eggplant Focaccia.
What a brilliant idea.
A fresh new flavor combining the best of tantan (spicy Sichuan-style) and curry.
Bake Shop Hatch offers an amazing variety, and they introduce new menu items every month, so you’ll never get bored no matter how often you visit ^^

The “Pan Dorobou” (Bread Thief β a beloved Japanese children’s book character) figurine in the shop was so adorable.
I hope the Bread Thief sneaks into Bake Shop Hatch one day!
