Today I’m taking you to a brand-new bakery located in Tatsuda Jinnai, Kita Ward, Kumamoto City:
“Liberte Pain Kumamoto”.

This bakery, which specializes in hard-crusted European-style bread, opened its doors on June 15.

The owner trained at “Bigot no Mise,” the legendary bakery founded by Philippe Bigot, the man widely credited with introducing authentic French bread to Japan.

Before opening, the team experimented endlessly to refine traditional French baguettes and hard-crusted loaves into versions that suit Japanese palates while staying true to their French roots.
As a hard-bread fanatic myself, I’d been following their Instagram with butterflies in my stomach long before opening day.

There are about three parking spaces right in front of the shop.

It’s perfectly normal for the shelves to be cleaned out within just a few hours of opening.

The interior is clean, bright, and beautifully styled.
Lovely floral arrangements, including elegant moth orchids, give the space a welcoming atmosphere.

Toward the back of the shop, you’ll find home-grown vegetables shared by local neighbors.

Cucumbers, bitter melon (goya), bocchan kabocha (mini Japanese pumpkins) and other seasonal produce are lined up at very reasonable prices, starting from just 100 yen.

Honestly, walking out with a baguette tucked into a paper bag has always been a little dream of mine.

【Yu-kone Shokupan (Hot-Water Kneaded Loaf, small) — 324 yen】
A Japanese-style milk bread made with a blend of Kitanokaori and Kitahonami wheat.

The hot-water kneading technique boosts moisture content, giving the bread a delightfully chewy texture.

While Japanese milk bread is often described as fluffy or soft, this loaf is seriously chewy.
It’s airy yet wonderfully dense, the kind of bread you want to chew slowly to savor every bite.

Delicious eaten plain, but pop it in the toaster and you’ll get a wonderful crispy outer layer while the inside stays moist.

【Chocolat Rustique — 302 yen】
Also made with Kitanokaori wheat.
High hydration plus a slow, low-temperature fermentation create a chewy, satisfying texture.

The crust delivers a satisfying chew, while the interior is tender and bouncy.

The bittersweet aroma blends beautifully with subtle sweetness, and chunks of chocolate add a delightful contrast — chewy yet crisp in every bite.

Toast it for about two minutes and the outside crisps up while the chocolate melts into a warm, gooey pocket inside.

【Uji Matcha & White Chocolate — 270 yen】
Made for those who prefer softer breads,
this one uses tu-tonne dough — a tender, pillowy style.

Crafted with locally grown Kumamoto-prefecture wheat plus eggs, butter, and milk, the result is irresistibly fluffy.

Open the bag and a soothing aroma of green tea drifts up to greet you.

The dough is soft and pleasant on the palate, and the white chocolate adds a perfectly balanced sweetness.
What I love most is the slightly bitter, refined fragrance you only get from authentic Uji matcha — a truly relaxing experience.

Other tu-tonne dough varieties include
Hojicha (Roasted Green Tea) White Chocolate (270 yen) and Lemon White Chocolate (270 yen).

You’ll also find seigle (rye) breads on the shelves, also baked with Kumamoto-grown wheat.

For their French breads, the bakers use “Lys d’Or” flour,
a specialty wheat blend designed specifically for French baguettes.

Choosing the right flour for each style of bread takes endless trial and error — and it shows in every loaf.

The Mentaiko French is generously stuffed (and topped) with spicy cod roe.
It pairs beautifully with the chewy crumb, and the umami builds with every bite.
No wonder this is the shop’s signature loaf.

The Petit Bâtard is a classic plain baguette.
French bread has a reputation for being hard and tough, but here it’s
crisp on the outside, chewy and tender inside.
Easy to eat with a gentle natural sweetness — it completely changed my perception of French bread.

You can really taste the subtle sweetness of the dough itself. Absolutely delicious.

The Olivier is a French baguette studded with green olives.

The plump, generous olives bring a wonderful aroma
and a subtle olive-oil richness that makes the bread irresistible.
