I’m Sanji, a Sarukuma writer who always seems to forget to snap photos of restaurant interiors when I’m writing articles!

In a recent article, I went on and on about how soba is the soul food of Japan, but really now —
ramen has to be Japan’s true soul food, doesn’t it?!

What’s that?
You say ramen originally came from China?

Sure, the origins may be Chinese, but ramen has evolved so uniquely in Japan that it’s practically a Japanese dish at this point — wouldn’t you agree?

I’d better stop there before I get on someone’s radar, lol.

Okay, my intro got way too long, but the spot I want to introduce today is right here:

Located in Minamitsuboi-machi, Chuo-ku, Kumamoto City,
“Chuka Soba SANYO (三陽)” is the place we’re checking out today.

The shop sits along Prefectural Route 1, on the way from Fujisaki Shrine toward Kami-Kumamoto.
If you’re a local, you may have spotted it before!
What sets this place apart is their serious commitment to ingredients.
The interior has a stylish, café-like vibe —
you can really feel the attention to detail in the design.
They even have kids’ chairs available!

Chuka Soba SANYO Recommended Menu

Here’s the menu.
Simple and easy to navigate.

Beyond the classic chuka soba (Chinese-style noodles), they also serve miso ramen, tantanmen, and seasonal options.

At lunchtime, you can add gyoza and other set items at a great value!

The chalkboard offers plenty of recommended specials too.

This time, I went with the standard Chuka Soba (Â¥770).

The medium-thin noodles pair beautifully with the light, clean broth.

The Set E with gyoza and roast pork rice bowl is also delicious!

The ramen here is made with carefully chosen ingredients — they use additive-free items and organic vegetables wherever possible, so it’s a place where parents can feel confident bringing their kids.

Light yet rich with deep flavor — this is a new generation of chuka soba that stands apart from the rest!

And there’s one more thing worth highlighting…

They have bottled beer of course, but they also stock an impressive selection of natural wines!

Natural wine is made from grapes grown with as few chemical fertilizers and pesticides as possible (definitions vary, so it’s worth looking into!), allowing the natural flavor of the grapes to shine through.

You don’t often find a ramen shop with this kind of wine list.

Pairing additive-free chuka soba and gyoza with a glass of natural wine?

Now that’s a meal worth savoring.
