I’m Binako, a writer for Sarukuma, and I still get emotional whenever I hear “Homura,” the theme song from Demon Slayer: Mugen Train!

Today I’m excited to introduce you to “naturable shop & cafe,” a charming little spot tucked away in Suya, Koshi City, Kumamoto Prefecture.

Here’s the exciting part — this cafe specializes in kouso genmai (fermented enzyme brown rice)! How wonderful is that?!

Kouso genmai is a traditional Japanese superfood made by fermenting brown rice with adzuki beans and natural salt for several days. The result is a nutty, slightly sweet rice that’s much easier to digest than regular brown rice — and packed with nutrients.

The parking lot is right in front of the shop!

Since the cafe is housed in a converted home, there’s room for about two cars.

Step inside and you’ll find a delightful selection of natural goods, beauty products, and wellness items — all carefully chosen to support a healthy lifestyle.

While there are no high chairs available, the cafe does provide baby baskets (kuuhan) and Bumbo seats, making it surprisingly welcoming for families with little ones!

They even carry oatmeal in several varieties, so you’re sure to find one that suits your taste!

Right by the register, you’ll spot bulk-sale nuts and raisins!

Pumpkin seeds and other goodies are also available — definitely worth a browse! Personally, I’ve been a fan of pumpkin seed cookies for as long as I can remember.

 

Recommended Menu Items

The Enzyme Brown Rice Lunch (1,200 yen) rotates regularly — there’s no fixed menu, which is half the fun of visiting!

On my visit, the lunch featured:
・Kuruma-fu (wheat gluten) panko cutlet
・Bacon from “Hashiru Buta” (Running Pig) farm

They also offer cafe-time treats and takeout options. I’d recommend giving them a call ahead of time to check what’s on offer!

This time, I went for takeout and ordered the Enzyme Brown Rice Burger for 800 yen!

I chose the kuruma-fu panko cutlet as my filling.

Yes, I know my cutting skills aren’t the best — I noticed too!

But oh my, was it delicious! The savory, perfectly seasoned brown rice paired with the panko cutlet was unbelievable. The kuruma-fu was so moist and juicy you’d never guess it was wheat gluten!

The vegetables tucked inside were equally delicious, and the seasoning was absolutely spot-on!

And since it’s made with enzyme brown rice, you can pat yourself on the back for eating something so wholesome while you enjoy every bite!
